Grace Webb, a Nutritional Coordinator with Saint Luke's Food As Medicine Everyday (FAME) program, has shared a recipe for roasted red pepper chickpea curry. This dish is intended to provide warmth and nutrition during colder days.
The FAME program is a 10-week initiative that offers classes on nutrition education. It aims to improve participants' diet and lifestyle by teaching them how to prepare nutritious meals. The program is a collaboration with the Saint Luke’s Muriel I. Kauffman Women’s Heart Center, which is part of the Food as Medicine Institute Alliance.
Webb provided detailed instructions for preparing the dish, which includes ingredients such as roasted red peppers, diced tomatoes, coconut milk, chickpeas, and various spices. The process involves blending the sauce ingredients until smooth and cooking them with sautéed vegetables and chickpeas before serving over brown rice.
